Bistro Blackwood is a quintessential Australian bistro. Jock Zonfrillo invites a roster of his winemaker friends into the Bistro to show off their drops and chat about their practice and philosophy with customers.

This week we are excited to host Adam Wadewitz to Bistro Blackwood on Rundle Street as our Winemaker Waiter. Dubbed one of Australia’s brightest winemaking talents, Adam moved to Shaw + Smith as Senior Winemaker in 2013. As the former Dux of Len Evans Tutorial, and a regular wine show judge, he will be in the restaurant as Winemaker Waiter, to pour wine, educate guests about his winemaking philosophy and give insight into pairing food with wine.

Established in 1989 by cousins Michael Hill Smith MW and Martin Shaw, Shaw + Smith make wines from the Adelaide Hills, using varieties such as Sauvignon Blanc, Riesling, Chardonnay, Pinot Noir and Shiraz, which are suited to the colder climate. In 2011, they bought Tasmania’s most highly recognised vineyard, the Tolpuddle Vineyard in the Coal River Valley, from which they craft a single vineyard Chardonnay and Pinot Noir.

As Senior Winemaker at Shaw and Smith, Adam works closely with founding winemaker Martin Shaw on both Shaw + Smith Adelaide Hills wines and the Tolpuddle Vineyard wines from Tasmania’s Coal River Valley.

Producing wine from two locations, Lenswood and Balhannah, the wineries total 55 hectares. Central to the Shaw + Smith approach is: growing the best grapes, sustainability, valuing vine health, soil health, and low yields. Committed to the pursuit of quality, all grapes at Shaw + Smith are hand-picked, with the fermentation, aging and bottling processes occurring on-site at their vineyard in Balhannah. Shaw + Smith wines are vibrant, medium bodied expressions of their varieties that reflect their sites and region.

This week we will be featuring the exquisite 2018 Sauvignon Blanc, 2018 Riesling, the 2017 Pinot Noir and the 2015 Shiraz, all sure to tantalise your tastebuds and leaving you wanting more.
